Ingredients
(one Kroger 5 lbs bag), peeled and chopped into ½ inch cubes 1 and 1/2 large onions, sliced long 15 thai chilies, sliced long (3 x 2) OR 4 jalapenos (4 x 2) sliced long 1 and 1/2 cup ginger: 1.5 inch piece sliced into slivers, then halved 2 can coconut milk 2 tsp salt 4 sprigs curry leaves 2 sprigs curry leaves chopped for garnish

Heat 1 ladle oil fry ginger and chilies well - 5 minutes Add 4 sprigs curry leaves and mix well Add onions and fry some more - 6 minutes Add potatoes and fry some more - 5 minutes Add salt when Potatoes are added Add coconut milk Add 1.5 can water Stir well CANCEL, then 8 min on HI pressure, then NPR Mix in chopped curry leaves and stir well
