Ingredients
1 can Costco diced tomatoes 1 Tbsp Costco minced garlic 2 Jalpenos 1 medium red onion, coarsely chopped 1.5 cups rice 3 cups water 1 tsp salt 3 Tbsp chopped cilantro
Steps
In mini chopper, mince the jalapenos with 1/4 of the onion Heat oil and fry the garlic Add the minced jalapeno/onion mix and fry some more Add the rice and fry well until it gets fragrant and the rice browns Coarsely puree the remaining onion and add it to the pot and stir to mix well. Puree the tomatoes and add to the pot and mix thoroughly. Add the water, salt, mix again. Bring to a boil and the reduce to just below LO. Cover and cook for 15-20 minutes, check after 15 min. Shut and heat and let stay covered for 10 more minutes. Open and stir in the chopped cilantro.
