Ingredients
3 (only 2 if using potatoes) cups garbanzo beans soaked overnight in 1-2 inches of water with 2 tsp salt 5 jalapenos (~ 1 cup) OR 3 long seranos, chopped 2 large red onions, chopped ( ~4 heaped cups)
optional: 2 large Russet potatoes (peeled, cubed) - ONLY if making 2 cups
2 ladles oil 4 cloves, 1 bay leaf, 1 long, thin cinnamon, 3 tsp cumin seeds 1/2 cup packed chopped ginger OR 1.5 Tbsp ginger paste 3 Tbsp Costco minced garlic 2.5 tsp salt (less 1 tsp if using soaking water) 1/2 tsp turmeric 1 tsp chilli powder 3 heaped tsp Chana Masala 2 can Costco diced tomatoes 1 can Costco tomato paste Cilantro
Steps
Chole 3 cups; no amchur, +4 cloves, 1 bayleaf, 1 long, thin cinnamon, 2 cans tomatoes, 3 long serranos, 2 onions (4 heaped cups), 1.5 tsp salt, ½ haldi, 3 channa masala, 1 chili, no dried red chili, STOVE TOP: rinse soaked beans, add 4 cups water and pressure cook for 40 min Heat 1 (1.5) ladles oil - HI Fry cumin seeds and cloves, bay leaf, cinnamon for 1-2 minutes - HI Add the jalapenos and garlic for 2-3 minutes - MED-HI Add the onions and fry on LO for 8-10 minutes until well done Add the ginger and diced potatoes and mix well Add salt, turmeric, chili and chana masala and fry to mix well Add the tomatoes and paste and mix well - rinse out cans with (soaking) water and add to chole. Cook for 3-5 minutes on MED-HI STOVETOP:
Add the pressure cooked beans + 1 can water to rinse out cooker
Bring to a boil and reduce heat to LO
Set timer for 20 minutes - stir well and often, at least every 5 minutes
INSTANT POT:
Add soaked beans plus enough water - do NOT exceed MAX line. Press CANCEL, then Pressure Cook on HIGH for 60 minutes, then NP
Garnish with cilantro
Note:
To make just 2 cups of Chole, change following quantities:
3 jalapenos (or 3 serranos)
2 tsp salt
2 tsp cumin seeds
1 Tbsp ginger paste
2 Tbsp Costco minced garlic
1/2 tsp chilli powder
2 heaped tsp Chana Masala
