Ingredients
2 large eggplants (or 3 medium ones) - cut stems, halve, then cut into 1 inch pieces
OR
18-20 small eggplants: 3 at a time - halved, then 4 slices, stack end-slices 2 high(x3), others 3 high(x4), cut into sticks 2 ladles oil 2 tsp black mustard seeds 2 tsp cumin seeds 2 onions, chopped 2 Tbsp Costco garlic, heaped 1/2 cup loosely packed minced ginger OR 2 Tbsp ginger paste) 4 jalapenos, chopped 1 tsp turmeric powder 1 tsp red chilli powder 2 tsp cumin powder 2 tsp amchur powder 2+1 tsp salt 4 large Roma tomatoes, diced Cilantro
Steps
Heat oil and brown the mustard and cumin seeds - HI Add the garlic, ginger, chillies and onions and brown for 4-5 minutes - MED-HI Add the turmeric, chilli, cumin, amchur and salt and fry for 2-3 minutes more - MED-HI Add the chopped baingans and mix thoroughly - MED-HI Cook covered for 15 minutes on MED, Add the diced tomatoes and mix well - MED-HI Cook covered for 15 minutes on MED, Turn off the heat, add cilantro.
