Ingredients
1 bag Costco Spinach 1-1.5 tsp salt 1 pot water ( 2 Costco empty cashew bottles) 2 packets tofu, pressed to remove water; fry lightly n fake butter 1 medium red onion, sliced 1/2 cup raw cashews 8 Thai green or 3 Serrano chillies 1 - 1.5 cups water 4 tbsp chopped ginger 1tbsp ginger-garlic paste 1 full tsp chopped garlic 4 big Roma tomatoes, finely chopped Pinch of hing 1/2 tsp haldi 1.5 tsp jeera 1 tsp kasuri methi 1/2 tsp rock salt 1/2-3/4 tsp garam masala 1.5 inch butter Oil for cooking
Steps
Boil pot of water; after it begins to boil, stuff in spinach leaves; boil for 4 minutes, switch off and strain right away. When cool, grind in small chopper to a fine paste Boil cashews, chopped green chillis, sliced onion for 10-15 minutes or until water dries; when cool, grind in small chopper to a fine paste In a large nonstick pan, add few tbsp oil, add hing and jeera. Fry for a minute Add chopped ginger; fry till light brown Add onion paste and haldi and keep stirring until brown and oil leaves sides. Halfway through frying onion, add ginger-garlic paste and chopped garlic Add tomatoes and salt; fry till paste thickens Add ground palak and fry for 10 minutes Add tofu, kasuri methi, rock salt, garam masala and butter Stir in, fry for 5-7 minutes (add water for desired consistency). Switch off
