Ingredients
3 lbs Bhindi cut in 1" pieces 1 large onion, roughly chopped
Puree:
2 Roma tomatoes + one can diced tomatoes 6 garlic cloves 1 big 2" piece ginger 5-6 small Thai chilies
Dry Masala:
1 tsp amchur 1/2 tsp anardana 4.5 tsp dhania powder 1 tsp kashmiri chili powder 15 Tbsp beaten dahi
Steps
Heat oil and fry onions until pale pink - MED Add Bhindi + 1 tsp salt + 1 tsp haldi Fry for 15 minutes until soft - set aside Add oil and fry 1.5 tsp jeera + 1 tsp ajwain + 1/4-1/2 tsp hing - MED Add tomato puree + 1 tsp salt Stir until oil separates -
but before Bharta consistency
Add dry masala and stir Add dahi and stir Add 3/4 tsp garam masala + 1 full tsp kasuri methi Fry everything for 5 minutes Add the cooked Bhindi and mix well for 10 minutes Add water (2 cups) to desired consistency, cover and simmer on LO for 7 minutes
