Geethu's Kitchen - Unni's Oven Roasted Crispy Bhindi
Ingredients
- Two packets Bhindi (2 lbs)
- Microwave one minute
- One Steel Plate
- 1 1/2 medium onion, sliced
- One Steel Plate
- 3 Roma Tomatoes sliced
- One small bowl
- 2 heaped teaspoon COSTCO Minced Garlic
- One medium bowl
- 1/2 tsp Ground Turmeric (Haldi powder)
- 2 tsp Coriander powder (Dhaniya powder)
- 1/2 tsp Kashmiri Red Chili powder
- 1/2 tsp Chili powder
- 2 tsp Salt
- One small Bowl
- 1 tsp Amchur powder
Method:
- Preheat the oven to 425°F (218°C).
- In a bowl.
- Add Bhindi
- the sliced onion,
- garlic,
- oil and
- spices
- into the bowl.
- Mix it all well
- so the okra and onions are coated with spices.
- Prepare a heavy-duty baking sheet
- by lining with foil or parchment paper.
- Spread out the spiced okra across the baking tray in a single layer.
- In a small parchment paper or foil,
- add the diced tomatoes
- and place them on the baking tray
- Bake for 30 minutes.
- Shut off
- Leave in oven for 15 minutes
- Now transfer the okra and tomatoes to a bowl.
- Mix them all up and
- add Amchur powder
