Geethu's Kitchen - Unni's Oven Roasted Crispy Bhindi

Ingredients

  1. Two packets Bhindi (2 lbs)
  2. Microwave one minute

  3. One Steel Plate
  4. 1 1/2 medium onion, sliced

  5. One Steel Plate
  6. 3 Roma Tomatoes sliced

  7. One small bowl
  8. 2 heaped teaspoon COSTCO Minced Garlic

  9. One medium bowl
  10. 1/2 tsp Ground Turmeric (Haldi powder)
  11. 2 tsp Coriander powder (Dhaniya powder)
  12. 1/2 tsp Kashmiri Red Chili powder
  13. 1/2 tsp Chili powder
  14. 2 tsp Salt

  15. One small Bowl
  16. 1 tsp Amchur powder

Method:

  1. Preheat the oven to 425°F (218°C).

  2. In a bowl.
  3. Add Bhindi
  4. the sliced onion,
  5. garlic,
  6. oil and
  7. spices
  8. into the bowl.
  9. Mix it all well
  10. so the okra and onions are coated with spices.

  11. Prepare a heavy-duty baking sheet
  12. by lining with foil or parchment paper.
  13. Spread out the spiced okra across the baking tray in a single layer.

  14. In a small parchment paper or foil,
  15. add the diced tomatoes
  16. and place them on the baking tray

  17. Bake for 30 minutes.
  18. Shut off
  19. Leave in oven for 15 minutes

  20. Now transfer the okra and tomatoes to a bowl.
  21. Mix them all up and
  22. add Amchur powder
