Geethu's Kitchen - Unni's Kerala Nurukku Manga Achar
Ingredients
- 4 small green mangoes which together weighed 300 grams.
- 1 teaspoon turmeric powder,
- 3 teaspoon Kashmiri red chili powder and
- 1 teaspoon salt on the chopped cubes.
- 2 tsp mustard seeds,
- 3/4 tsp fenugreek powder and
- 3/4 tsp asafoetida (hing).
- 8 small chopped Garlic in small pieces
- add 8 to 10 curry leaves (chopped into small pieces).
Method:
- Rinse 4 small (300 grams) and then dry them with a clean kitchen towel.
- There should be no trace of moisture on them.
- Chop them into small bite-sized pieces or cubes.
- Place in a Bowl.
- Sprinkle
- 1 teaspoon turmeric powder,
- 3 teaspoon Kashmiri red chili powder and
- 1 teaspoon salt on the chopped cubes.
- Mix them.
- Heat 1 Ladle cooking oil in a small kadai.
- Add
- 2 tsp mustard seeds,
- 3/4 tsp fenugreek powder and
- 3/4 tsp asafoetida (hing).
- Once they start crackling,
- Add chopped Garlic in small pieces
- add 8 to 10 curry leaves (chopped into small pieces).
- Fry for 10 seconds
- and then switch off the flame.
- Pour this hot tempering over the masala mixed mangoes.
- Stir everything well.
- The Pickle is ready
- and ready to eat.
