Geethu's Kitchen - Unni's Kaala Chana

Ingredients

  1. 3 cups Black Chana - soak overnight in 6 cups of water + 3 tsp salt



  2. One Small Bowl
  3. 1 tsp Turmeric powder
  4. 2 tsp Chilli powder
  5. 2 tsp Salt

  6. One medium small bowl
  7. 3 tsp cumin seeds (jeera)
  8. 3 tsp mustard seeds

  9. One medium small bowl
  10. 1.5 tsp salt
  11. 1.5 tsp cumin powder
  12. 1.5 tsp dhania powder

  13. One Small Bowl
  14. 1/2 tsp Garam Masala

  15. One Large small bowl
  16. 9 long strands of curry leaves - chopped

  17. One Large Small Bowl
  18. 5 or 4 Jalapeno Chillies -Sliced Long

  19. One Steel Plate
  20. Two and Half Large Onions sliced long (sliced long - 2 x 2 x 2)

Method:

  1. Night Before
  2. 3 cups black chana - soak overnight in 6 cups of water + 3 tsp salt

  3. Early Morning (6 AM)
  4. Take overnight soaked Chana.
  5. Rinse it.
  6. Add Water to little more than level of Chana

  7. Instant Pot
  8. cook soaked chana
  9. Add turmeric and chili powders
  10. Pressure Cook on HIGH for 60 minutes

  11. Natural Release

  12. Take Large Frying Pan
  13. Heat 1.5 ladle oil
  14. and fry Cumin and Mustard seeds medium high

  15. Add Curry leaves and mix - HI

  16. Add Chillies and mix - HI

  17. Add Onions, mix well
  18. then fry well for 8 minutes on MED

  19. Add Salt, Cumin Powder and Dhania powders (Coriander) ,fry 3-4 minutes to mix well MED

  20. Add cooked Chana and mix well on HI,

  21. then Close Lid ,cook on LOW for 10 min

  22. Shut off heat and mix in Garam Masala and mix well
  23. keep covered for another 10 min
