Geethu's Kitchen - Unni's Instant Pot Tomato Pickle
Ingredients
- • Oil
- One small bowl
- • Mustard seeds - 1 table Spoon
- • Cumin seeds - 1 table Spoon
- • Salt - 2 tsp
- One medium bowl
- • Red chili powder - 1 tsp
- • 1 tsp minced Garlic - I head,
- • Hing/ asafoetida - few pinches(optional)
- • Tomatoes - 2 cans
Method:
- saute
- Add mustard seeds and cumin seeds
- Add Salt - 2 tsp
- Add 2 can tomatoes
- mix well
- Cancel
- Pressure cook High 25 mins.
- quick release after 10 mins in warm mode.
- Saute
- let the water evaporate completely
- • It will take 30 to 40 mins
- keep stirring occasionally to prevent burning at the bottom.
- • When the water is almost gone and oil starts leaving to the sides,
- add Red chili powder - 1 tsp
- 1 tsp minced Garlic and
- Hing. 1 tsp
- Mix well.saute for 2 mins
- • Also add more oil if desired.( if added saute for 2 to 3 mins).
- • Turn off, let it completely cool and transfer to air tight container.
