Geethu's Kitchen - Unni's Instant Pot Tomato Pickle

Ingredients

  1. • Oil

  2. One small bowl
  3. • Mustard seeds - 1 table Spoon
  4. • Cumin seeds - 1 table Spoon

  5. • Salt - 2 tsp

  6. One medium bowl
  7. • Red chili powder - 1 tsp
  8. • 1 tsp minced Garlic - I head,
  9. • Hing/ asafoetida - few pinches(optional)

  10. • Tomatoes - 2 cans

Method:

  1. saute
  2. Add mustard seeds and cumin seeds
  3. Add Salt - 2 tsp
  4. Add 2 can tomatoes
  5. mix well

  6. Cancel
  7. Pressure cook High 25 mins.

  8. quick release after 10 mins in warm mode.

  9. Saute
  10. let the water evaporate completely
  11. • It will take 30 to 40 mins
  12. keep stirring occasionally to prevent burning at the bottom.

  13. • When the water is almost gone and oil starts leaving to the sides,
  14. add Red chili powder - 1 tsp
  15. 1 tsp minced Garlic and
  16. Hing. 1 tsp

  17. Mix well.saute for 2 mins
  18. • Also add more oil if desired.( if added saute for 2 to 3 mins).
  19. • Turn off, let it completely cool and transfer to air tight container.
