Geethu's Kitchen - Unni's Instant Pot Punjabi Dum Aloo

Ingredients

  1. 1/2 5 lb bag of creamer potatoes (~25)

  2. One plate
  3. 1 large onion (roughly chopped),

  4. One small Bowl
  5. 1/2 tsp haldi powder,
  6. 1/2 tsp kashmiri chili powder,
  7. 1/2 tsp salt,

  8. One small bowl
  9. 1 Tbsp corriander powder,
  10. 1 tsp jeera powder,
  11. 1/2 tsp black pepper powder

  12. One Small Bowl
  13. 8 cashews

  14. 2 Tbsp ginger garlic paste

  15. One Medium Bowl
  16. 2 bay leaf,
  17. 2 dried red chilies,
  18. 1/2 tsp hing,
  19. 1/2 tsp jeera seeds,
  20. 3 cloves,
  21. 3 cardamom

  22. One Small bowl
  23. 2 tsp kashmiri mirch powder,
  24. 1/2 tsp haldi powder,
  25. 1 tsp dhania powder,
  26. 3 green chilis (slit long),
  27. 2 tsp salt

  28. one small bowl
  29. 1/2 tsp garam masala powder

Method:

  1. Place Trivet
  2. 2 cups water
  3. + medium white potatoes on trivet,
  4. STEAM on HI pressure for 5 min,
  5. open after 5 minutes

  6. Peel when cool
  7. poke each potato with fork 3-4 times
  8. Sprinkle 1/2 tsp haldi, 1/2 tsp kashmiri chili, 1/2 tsp salt,
  9. mix well gently and
  10. keep aside

  11. In 3 cup yogurt (beaten smooth),
  12. add 1 Tbsp coriander powder,
  13. 1 tsp jeera powder,
  14. 1/2 tsp black pepper powder
  15. - mix well and keep aside

  16. SAUTE
  17. 1 ladle (4 Tbsp) oil,
  18. shallow fry the potatoes for 5 minutes,
  19. then strain and keep aside on a plate

  20. In same oil,
  21. fry
  22. 2 bay leaf,
  23. 2 dried red chilies,
  24. 1/2 tsp hing,
  25. 1/2 tsp jeera seeds,
  26. 3 cloves,
  27. 3 cardamom,

  28. Add
  29. 1 large onion (roughly chopped),
  30. 2 Tbsp ginger garlic paste,
  31. 8 cashews
  32. and cook for 5 minutes

  33. Add
  34. 2 tsp kashmiri mirch powder,
  35. 1/2 tsp haldi powder,
  36. 1 tsp dhania powder,
  37. 3 green chilis (slit long),
  38. 2 tsp salt
  39. and fry for 2-3 minutes more

  40. Add
  41. 1 cup water,
  42. 1/2 tsp garam masala powder,
  43. mix well,

  44. press CANCEL

  45. Puree using hand-blender

  46. SAUTE
  47. gently mix in yogurt
  48. When it begins to bubble,
  49. add 1 cup water,
  50. the fried potatoes,
  51. mix well

  52. Press CANCEL,
  53. then
  54. Pressure Cook on HIGH for 4 minutes,
  55. then NPR
