Geethu's Kitchen - Unni's Instant Pot Pineapple jam

Ingredients

  1. 1 medium ripened pineapple (about 4 cups)
  2. Or two 20 oz Canned Pineapples with juice,
  3. 1 cup Sugar/Splenda
  4. Juice of 1 lime

Method:

  1. Peel and dice a medium-sized ripened pineapple.
  2. Use a pineapple that has started turning orange/brown
  3. for an intense pineapple flavor.

  4. Add the pineapple, Sugar/Splenda, and freshly squeezed lime juice
  5. to the Instant Pot and stir well.

  6. Close the lid.
  7. PRESSURE COOK (High Pressure) 8 minutes.
  8. Quick release.

  9. Use a potato masher or immersion blender
  10. to puree the fruit until the desired consistency.

  11. Saute 5 minutes
  12. while stirring continuously
  13. until jam reaches the required gel-like consistency.

  14. Switch off.
  15. Allow to Cool
  16. The jam also will continue to thicken as it cools.

  17. Once the jam has cooled to room temperature,
  18. transfer it to a jar.
  19. Yields one 16-Ounces jar of jam.
