Geethu's Kitchen - Unni's Instant Pot Paneer Pulao

Ingredients

  1. Paneer - cubed 14 oz block
  2. Basmati Rice - 3 cups
  3. Water - 5 cups
  4. Salt - to taste
  5. oil - 2tbsps

  6. One Medium Bowl
  7. Star anise - 2 small
  8. Bay leaf - 2 small
  9. Cinnamon - 2 pcs
  10. Cardamom - 2
  11. Cloves - 5
  12. Cumin seeds - 1tbsp

  13. One Medium Bowl
  14. Red chili powder - to taste ( can use green chillies if desired)
  15. Turmeric - 1tsp
  16. Garam masala - 1 tsp
  17. Coriander powder - 1.5 tbsp
  18. Onion - 1 medium thinly sliced

  19. Ginger garlic paste - 1.5 tbsp

  20. Tomatoes - 2 diced

  21. Cilantro - to garnish

Method:

  1. Saute Mode
  2. Add Oil
  3. Add first bowl
  4. (Star anise, Bay leaf, Cinnamon, Cardamom, Cloves, Cumin seeds)
  5. Fry
  6. Add onions
  7. fry till soft

  8. Add ginger garlic paste 1.5 tbsp
  9. Add Tomatoes
  10. Add second bowl
  11. (Red chili powder,Turmeric - 1tsp,Garam masala - 1 tsp,Coriander powder - 1.5 tbsp )
  12. Fry for a minute

  13. Add in the paneer cubes and mix gently

  14. Add in the 3 cups soaked rice along with 5 cups of water
  15. (Usually 1:2 ratio for rice to water
  16. but since there is lot of moisture from tomatoes reduce one cup.)

  17. Mix gently and check for salt,
  18. the water should be little salty.

  19. Cancel

  20. Push the rice button.
  21. Once it goes into warm mode,
  22. immediately do quick release.

  23. To avoid overcooking from residual heat,
  24. transfer the rice into serving dish .
  25. Garnish with cilantro
  26. Cover the dish until serving.
  27. Enjoy it with Raitha.
