Geethu's Kitchen - Unni's Instant Pot Lemon Rice

Ingredients

  1. 2 cups washed, rinsed rice

  2. 1 (1 and 1/2) onion (chopped),

  3. 4(6) green chilies

  4. one large bowl
  5. 4 (6)sprigs curry leaves,
  6. 2 (3) dried red chillies (broken into 3 pieces)

  7. One Small Bowl
  8. 2 (3) tsp mustard seeds,
  9. 2 (3) Tbsp urad dal,
  10. 2 (3)Tbsp chana dal

  11. one small bowl
  12. 1(1.5) tsp turmeric powder,
  13. 1 (1.5) tsp salt,

  14. 6 (9) Tbsp lemon juice

  15. Garnish with 1/4 (1/2) cup cilantro (chopped)

Method:

  1. Saute
  2. 1 Tbsp oil and fry

  3. One Small Bowl
  4. 3 tsp mustard seeds,
  5. 3 Tbsp urad dal,
  6. 3 Tbsp chana dal and
  7. fry until dals turn light brown

  8. Add 6 sprigs curry leaves, 3 dried red chillies (broken into 3 pieces) and fry for 10 secs
  9. Add 1 1/2 onion (chopped), 6 green chilies and fry well for 5 minutes
  10. optional: Add 1 carrot (grated) and fry for 30 sec
  11. Add 1.5 tsp turmeric powder, 1.5 tsp salt,
  12. Add 3 cups washed, rinsed rice and 3.75 cups water

  13. Delay start 30 min,
  14. Pressure Cook on HIGH for 8 minutes - then NPR.
  15. After NPR, add 9 Tbsp lemon juice and mix gently
  16. optional: Garnish with 1/2 cup cilantro (chopped)
