Geethu's Kitchen - Unni's Instant Pot Kerala Avial

Ingredients
- One big bowl
- 2 cup grated coconut
- 4 Green chilli chopped
- 1 Onion chopped
- 1 tsp cumin seeds grind
- alternate 2 tsp yogurt,
- Vegetables, Chopped into slices
- Green beans,French Beans,Achinga,Payaru,
- Elephant yam (Suran/Senai/Ratalu) ,
- Drumstick
- Beans
- One small Bowl
- 2 tsp Turmeric Powder
- 1 tsp Chilli powder
- 3 tsp Salt
- 1 Green Chilli
- 2 tsp imly paste
- 2 tsp salt
- 4 Sprigs Curry Leaves
Method:
- In blender
- 2 cup grated coconut
- 4 Green chilli chopped
- 1 Onion chopped
- 1 tsp cumin seeds grind
- grind all to a coarse mix
- without adding water.
- 2 tsp yogurt,
- Instant Pot
- all the vegetables into the pot
- add 1/2 cup of water.
- Add 2 tsp Turmeric Powder
- Add 1 tsp Chilli Powder
- Add 2 tsp Salt
- Add 2 Green Chilli -half slit length wise
- mix it well.
- Pressure cook high pressure for 4 minutes.
- after 10 minutes of NPR ,
- open the lid and
- add the grinded coconut mixture and
- mix it gently along with vegetables.
- Add 2 tsp imly paste
- Add 2 and half tsp salt
- Test for taste.
- if Puli /Tangy
- add 1 tsp salt while stirring
- Drizzle coconut oil over the Avial mix,
- add fresh curry leaves.
