Geethu's Kitchen - Unni's Instant Pot Kerala Avial

Ingredients

  1. One big bowl
  2. 2 cup grated coconut
  3. 4 Green chilli chopped
  4. 1 Onion chopped
  5. 1 tsp cumin seeds grind

  6. alternate 2 tsp yogurt,

  7. Vegetables, Chopped into slices
  8. Green beans,French Beans,Achinga,Payaru,
  9. Elephant yam (Suran/Senai/Ratalu) ,
  10. Drumstick
  11. Beans

  12. One small Bowl
  13. 2 tsp Turmeric Powder
  14. 1 tsp Chilli powder
  15. 3 tsp Salt
  16. 1 Green Chilli

  17. 2 tsp imly paste
  18. 2 tsp salt

  19. 4 Sprigs Curry Leaves

Method:

  1. In blender
  2. 2 cup grated coconut

  3. 4 Green chilli chopped
  4. 1 Onion chopped
  5. 1 tsp cumin seeds grind
  6. grind all to a coarse mix
  7. without adding water.

  8. 2 tsp yogurt,

  9. Instant Pot
  10. all the vegetables into the pot
  11. add 1/2 cup of water.
  12. Add 2 tsp Turmeric Powder
  13. Add 1 tsp Chilli Powder
  14. Add 2 tsp Salt
  15. Add 2 Green Chilli -half slit length wise
  16. mix it well.

  17. Pressure cook high pressure for 4 minutes.

  18. after 10 minutes of NPR ,
  19. open the lid and
  20. add the grinded coconut mixture and
  21. mix it gently along with vegetables.

  22. Add 2 tsp imly paste
  23. Add 2 and half tsp salt

  24. Test for taste.
  25. if Puli /Tangy
  26. add 1 tsp salt while stirring

  27. Drizzle coconut oil over the Avial mix,
  28. add fresh curry leaves.
