Geethu's Kitchen - Unni's Air Fried Aloo Gobhi

Ingredients
- 2 medium potatoes,
- peeled and sliced into thick rounds,
- then cut into halves
- 3 lbs frozen cauliflower florets (dry on towels)
- 1 12 oz packet frozen peas
- 1 large onion, chopped
- Marinate for Potatoes
- One Small Bowl
- 1/4 tsp haldi,
- 1/4 tsp chili,
- 1/4 tsp salt,
- 1/2 tsp oil
- Marinate for Cauliflower
- One Small Bowl
- 1/2 tsp haldi,
- 1 tsp chili,
- 1 tsp salt,
- 1 Tbsp oil
- for Tadka
- one Small Bowl
- 2 tsp cumin seeds
- One Medium bowl
- 1 bay leaf
- 1 Tbsp ginger garlic paste
- 2 tsp cumin seeds
- 1 tsp haldi
- 1 tsp chili powder
- 2 tsp coriander powder
- 1 tsp amchur
- 1 tsp garam masala
- 2 green chilli (chopped or slit in half)
- 2 tablespoon cilantro leaves (optional)
Method:
- Marinate Potatoes
- 2 medium potatoes,
- peeled and sliced into thick rounds,
- then cut into halves
- Mix 1/4 tsp haldi, 1/4 tsp chili, 1/4 tsp salt, 1/2 tsp oil
- AIR-FRY for 12 minutes at 400 deg, toss half-way
- Marinate Cauliflower
- 3 lbs frozen cauliflower florets (dry on towels)
- Mix in large steel bowl with 1/2 tsp haldi, 1 tsp chili, 1 tsp salt, 1 Tbsp oil
- Marinate for 10 min,
- AIR-FRY in 2-3 batches for 20 minutes at 400 deg,
- Tadka
- Heat 1 ladle oil
- Add Jeera Seeds
- Add the bay leaf
- Fry
- Add onions and fry for 5 min
- Add ginger garlic paste,
- fry for 2 min
- Add spices and fry for 1 min
- Add peas
- Add 3/4 teaspoon salt
- fry covered for 5 minutes
- Add green chilly,
- air-fried potatoes and
- cauliflower and
- mix well
