Geethu's Kitchen - Unni's Air Fried Aloo Gobhi

Ingredients

  1. 2 medium potatoes,
  2. peeled and sliced into thick rounds,
  3. then cut into halves

  4. 3 lbs frozen cauliflower florets (dry on towels)

  5. 1 12 oz packet frozen peas
  6. 1 large onion, chopped

  7. Marinate for Potatoes
  8. One Small Bowl
  9. 1/4 tsp haldi,
  10. 1/4 tsp chili,
  11. 1/4 tsp salt,
  12. 1/2 tsp oil

  13. Marinate for Cauliflower
  14. One Small Bowl
  15. 1/2 tsp haldi,
  16. 1 tsp chili,
  17. 1 tsp salt,
  18. 1 Tbsp oil

  19. for Tadka
  20. one Small Bowl
  21. 2 tsp cumin seeds

  22. One Medium bowl
  23. 1 bay leaf
  24. 1 Tbsp ginger garlic paste
  25. 2 tsp cumin seeds
  26. 1 tsp haldi
  27. 1 tsp chili powder
  28. 2 tsp coriander powder
  29. 1 tsp amchur
  30. 1 tsp garam masala

  31. 2 green chilli (chopped or slit in half)
  32. 2 tablespoon cilantro leaves (optional)

Method:

  1. Marinate Potatoes
  2. 2 medium potatoes,
  3. peeled and sliced into thick rounds,
  4. then cut into halves
  5. Mix 1/4 tsp haldi, 1/4 tsp chili, 1/4 tsp salt, 1/2 tsp oil
  6. AIR-FRY for 12 minutes at 400 deg, toss half-way

  7. Marinate Cauliflower
  8. 3 lbs frozen cauliflower florets (dry on towels)
  9. Mix in large steel bowl with 1/2 tsp haldi, 1 tsp chili, 1 tsp salt, 1 Tbsp oil
  10. Marinate for 10 min,
  11. AIR-FRY in 2-3 batches for 20 minutes at 400 deg,



  12. Tadka
  13. Heat 1 ladle oil
  14. Add Jeera Seeds
  15. Add the bay leaf
  16. Fry
  17. Add onions and fry for 5 min
  18. Add ginger garlic paste,
  19. fry for 2 min
  20. Add spices and fry for 1 min
  21. Add peas
  22. Add 3/4 teaspoon salt
  23. fry covered for 5 minutes
  24. Add green chilly, 
  25. air-fried potatoes and
  26. cauliflower and
  27. mix well
