Geethu's Kitchen - Paru's Veg Quinoa OR Rice

(based on this and this)

Ingredients

  1. 1 cup quinoa OR 2 cup rice (washed, then soaked for 20 min)
  2. 4 Tbsp oil
  3. 2 tsp cumin seeds
  4. 1 lb frozen vegetables (thawed in microwave for 1 minute)
  5. 1 tsp ginger-garlic paste
  6. 1/4 tsp turmeric
  7. 1 tsp chilli powder OR 1/2 tsp chilli powder + 2 medium jalapenos (coarsely diced)
  8. 1 tsp salt
  9. 1 tsp Biryani OR 1 tsp Kitchen King Masala OR 2 tsp Chunky Chaat
  10. Quinoa:
    5 cups water for STOVETOP
    1.75 cups of water for
  11. Rice:
    water/rice ratio 1:2 for STOVETOP
    water/rice ratio 1:1.5 for

Method:

  1. Heat oil and fry cumin seeds
  2. Add jalapenos and fry well
  3. Add veggies, ginger-garlic paste and fry well for 4-5 minutes
  4. Add quinoa/rice and fry to mix well
  5. Add salt, chilli powder, turmeric and fry some more
  6. Add water, masala
  7. Quinoa:
    • STOVETOP:
        Bring to a boil on HI, then cook on LO for 20 min (stir after 15 min)
      • Shut off heat, leave covered for 10 min, then stir and fluff up.
    • :
      • Press SAUTE and follow steps up to adding water
      • Press CANCEL, then Pressure Cook on HIGH for 2 minutes, then NPR after 10 min (see Basic Info)
  8. Rice
    : Press CANCEL, then Pressure Cook on HIGH for 6 minutes, then NPR
