Geethu's Kitchen - Paru's Upma
(based on this and this)
Ingredients
- 2 cup dalia (cracked wheat)
- 4 cup chopped onions - 2 large red onion
- 8 long, fat serrano chilies (~1 cup)
OR 4 large fat jalapenos (~2 cups)
OR 16-20 large Thai Chilies (halved then chopped)
- 1 16 oz packet mixed veg
- 1 shallow ladle oil
- 2 tsp black mustard seeds
- 2 tsp cumin seeds
- 2 Tbsp channa dal (dalia) (or double amount of urad dal)
- 2 Tbsp urad dal (or double amount of dalia)
- 8 long sprigs curry leaves - chopped
- 3 tsp salt- level
- 6 cups water for STOVETOP / 3 cups of water for
- 2 tbsp chopped coriander (for garnish)
Method:
- Clean and wash the broken wheat thoroughly. Drain and keep aside - soak in 1 cup water.
- Heat oil in pressure cooker and fry mustard and cumin seeds for 1-2 minutes on HI.
- Add channa and urad dals and fry for another minute on HI.
- Add curry leaves and fry for another minute on HI.
- Add onion, salt and fry for 5-7 minutes on MED-HI.
- Add chilies and fry for 2 minutes on MED-HI.
- Add frozen peas (heated in bag for 1 min in microwave), dalia and fry to mix well - 3-5 minutes on MED-HI.
- STOVETOP:
Add water and bring to a boil.
- Cook until steam comes on HI and then cook for 10 minutes on MED-LO (9 o'clock).
- Shut of heat and let it cook for another 10 minutes.
Based on this and this
- Do steps 1-7 in SAUTE mode then add water. Mix thoroughly.
- Press CANCEL, then Pressure Cook on HIGH for 3 minutes, then NPR after 10 min (see Basic Info)
