Geethu's Kitchen - Paru's Upma

Ingredients

  1. 2 cup dalia (cracked wheat)
  2. 4 cup chopped onions - 2 large red onion
  3. 8 long, fat serrano chilies (~1 cup)
    OR 4 large fat jalapenos (~2 cups)
    OR 16-20 large Thai Chilies (halved then chopped)
  4. 1 16 oz packet mixed veg
  5. 1 shallow ladle oil
  6. 2 tsp black mustard seeds
  7. 2 tsp cumin seeds
  8. 2 Tbsp channa dal (dalia) (or double amount of urad dal)
  9. 2 Tbsp urad dal (or double amount of dalia)
  10. 8 long sprigs curry leaves - chopped
  11. 3 tsp salt- level
  12. 6 cups water for STOVETOP / 3 cups of water for
  13. 2 tbsp chopped coriander (for garnish)

Method:

  1. Clean and wash the broken wheat thoroughly. Drain and keep aside - soak in 1 cup water.
  2. Heat oil in pressure cooker and fry mustard and cumin seeds for 1-2 minutes on HI.
  3. Add channa and urad dals and fry for another minute on HI.
  4. Add curry leaves and fry for another minute on HI.
  5. Add onion, salt and fry for 5-7 minutes on MED-HI.
  6. Add chilies and fry for 2 minutes on MED-HI.
  7. Add frozen peas (heated in bag for 1 min in microwave), dalia and fry to mix well - 3-5 minutes on MED-HI.
  8. STOVETOP:
      Add water and bring to a boil.
    • Cook until steam comes on HI and then cook for 10 minutes on MED-LO (9 o'clock).
    • Shut of heat and let it cook for another 10 minutes.
  9. Based on this and this
    • Do steps 1-7 in SAUTE mode then add water. Mix thoroughly.
    • Press CANCEL, then Pressure Cook on HIGH for 3 minutes, then NPR after 10 min (see Basic Info)
  10. Calories: 280 cal in 1 cup, 151 cal in 1 cup plain cooked cracked wheat
