Geethu's Kitchen - Paru's Thai Tofu Curry
(based on this and this and this)
Ingredients
- 1 large red onion, diced
- 2 large jalapenos, chopped
- 1 heaped Tbsp ginger-garlic paste
- 1 heaped Tbsp ginger paste
- 2 bell pepper, diced coarsely
- 1 tsp haldi
- 1 tsp cumin powder
- 2 tsp salt
- 2 x 16 oz Azi (safeway) Extra firm tofu, pressed, then diced
- 2 Tbsp Sambal chilli sauce
- 2 Tbsp soy sauce
- 2 Tbsp creamy peanut butter
- 1 can coconut milk + 1/2 can water (to wash out can)
- 1 Tbsp lemon juice conc.
- 1 Tbsp finely chopped thai basil leaves ~20 leaves
Method:
- Heat oil and fry onions, jalapenos
- Add ginger, garlic pastes and stir thoroughly
- Add bell pepper and fry well for approx 8-10 minutes
- Add haldi, cumin, salt and mix well
- Add diced tofu and fry well for approx 5 minutes
- Add coconut milk + water, chilli sauce, soy sauce, peanut butter and bring to a gentle boil and cook for 10 minutes on LO
- Shut of heat and add the lemon juice and basil and mix well
