Geethu's Kitchen - Paru's Thai Tofu Curry

(based on this and this and this)

Ingredients

  1. 1 large red onion, diced
  2. 2 large jalapenos, chopped
  3. 1 heaped Tbsp ginger-garlic paste
  4. 1 heaped Tbsp ginger paste
  5. 2 bell pepper, diced coarsely

  6. 1 tsp haldi
  7. 1 tsp cumin powder
  8. 2 tsp salt
  9. 2 x 16 oz Azi (safeway) Extra firm tofu, pressed, then diced

  10. 2 Tbsp Sambal chilli sauce
  11. 2 Tbsp soy sauce
  12. 2 Tbsp creamy peanut butter
  13. 1 can coconut milk + 1/2 can water (to wash out can)

  14. 1 Tbsp lemon juice conc.
  15. 1 Tbsp finely chopped thai basil leaves ~20 leaves

Method:

  1. Heat oil and fry onions, jalapenos
  2. Add ginger, garlic pastes and stir thoroughly
  3. Add bell pepper and fry well for approx 8-10 minutes

  4. Add haldi, cumin, salt and mix well
  5. Add diced tofu and fry well for approx 5 minutes

  6. Add coconut milk + water, chilli sauce, soy sauce, peanut butter and bring to a gentle boil and cook for 10 minutes on LO

  7. Shut of heat and add the lemon juice and basil and mix well
