Geethu's Kitchen - Paru's Spanish Rice

Ingredients
- 1 can Costco diced tomatoes
- 1 Tbsp Costco minced garlic
- 2 Jalpenos
- 1 medium red onion, coarsely chopped
- 1.5 cups rice
- 3 cups water
- 1 tsp salt
- 3 Tbsp chopped cilantro
Method:
- In mini chopper, mince the jalapenos with 1/4 of the onion
- Heat oil and fry the garlic
- Add the minced jalapeno/onion mix and fry some more
- Add the rice and fry well until it gets fragrant and the rice browns
- Coarsely puree the remaining onion and add it to the pot and stir to mix well.
- Puree the tomatoes and add to the pot and mix thoroughly.
- Add the water, salt, mix again.
- Bring to a boil and the reduce to just below LO.
- Cover and cook for 15-20 minutes, check after 15 min.
- Shut and heat and let stay covered for 10 more minutes.
- Open and stir in the chopped cilantro.
