Geethu's Kitchen - Paru's Saag Tofu

Ingredients

  1. 2 Safeway Tofu - each pressed and diced 3 x 4 x 5
  2. 1 large onion - minced
  3. 2 tsp cumin seeds
  4. 2 Tbsp ginger-garlic paste
  5. 1 tsp salt
  6. 1 tsp turmeric powder
  7. 2 tsp cumin powder
  8. 1 tsp garam masala
  9. 2-3 Tbsp lemon juice concentrate
  10. 4 tightly packed cups (1cup ~= very large handful) Costco spinach, minced fine twice

Method:

  1. Heat 2 ladles oil and fry cumin seeds - HI
  2. Add onion and fry - MED-HI
  3. Add ginger garlic paste and fry well - MED-HI
  4. Add diced tofu and fry well - MED
  5. Add salt, turmeric and mix well - MED
  6. Add cumin, garam masala and mix well - MED-LO
  7. Add spinach and mix well - MED-LO
  8. Add lemon juice and mix well
  9. Shut off heat and let it rest covered for 10-15 minutes,
