Geethu's Kitchen - Paru's Saag Tofu

Ingredients
- 2 Safeway Tofu - each pressed and diced 3 x 4 x 5
- 1 large onion - minced
- 2 tsp cumin seeds
- 2 Tbsp ginger-garlic paste
- 1 tsp salt
- 1 tsp turmeric powder
- 2 tsp cumin powder
- 1 tsp garam masala
- 2-3 Tbsp lemon juice concentrate
- 4 tightly packed cups (1cup ~= very large handful) Costco spinach, minced fine twice
Method:
- Heat 2 ladles oil and fry cumin seeds - HI
- Add onion and fry - MED-HI
- Add ginger garlic paste and fry well - MED-HI
- Add diced tofu and fry well - MED
- Add salt, turmeric and mix well - MED
- Add cumin, garam masala and mix well - MED-LO
- Add spinach and mix well - MED-LO
- Add lemon juice and mix well
- Shut off heat and let it rest covered for 10-15 minutes,
