Geethu's Kitchen - Paru's Bok Choy

(based on this and this)

Ingredients

  1. 2 lbs Bok Choy (2 Lee Lee packets ~ .9 lbs each)
    • chop off leaves, cutting into two if needed, and place in large steel bowl
    • chop and separate bulbs into smaller pieces (after cutting off the base), and place into another steel bowl filled 1/2 with water
    • rinse the chopped bulbs twice, lifting bulbs onto plate, then draining and refilling water
  2. 2 Tbsp oil
  3. 1 heaped Tbsp Costco minced garlic
  4. 1 tsp crushed red pepper
  5. 1/2 tsp ginger paste
  6. 2 Tbsp soy sauce

Method:

  1. Heat oil and fry garlic
  2. Add crushed red pepper and fry 1 min more
  3. Add chopped bulb parts mix well
  4. Add ginger paste, soy sauce and mix well
  5. Close lid and steam for 3 min, stirring often
  6. Add leaves and stir well for 1-2 minutes
  7. Close lid and steam for 5 min, stirring often
  8. Let sit for 5 min
