Geethu's Kitchen - Paru's Bok Choy
(based on this and this)
Ingredients
- 2 lbs Bok Choy (2 Lee Lee packets ~ .9 lbs each)
- chop off leaves, cutting into two if needed, and place in large steel bowl
- chop and separate bulbs into smaller pieces (after cutting off the base), and place into another steel bowl filled 1/2 with water
- rinse the chopped bulbs twice, lifting bulbs onto plate, then draining and refilling water
- 2 Tbsp oil
- 1 heaped Tbsp Costco minced garlic
- 1 tsp crushed red pepper
- 1/2 tsp ginger paste
- 2 Tbsp soy sauce
Method:
- Heat oil and fry garlic
- Add crushed red pepper and fry 1 min more
- Add chopped bulb parts mix well
- Add ginger paste, soy sauce and mix well
- Close lid and steam for 3 min, stirring often
- Add leaves and stir well for 1-2 minutes
- Close lid and steam for 5 min, stirring often
- Let sit for 5 min
