Geethu's Kitchen - Paru's Baingan Subzi

Ingredients

  1. 2 large eggplants (or 3 medium ones) - cut stems, halve, then cut into 1 inch pieces
    OR18-20 small eggplants: 3 at a time - halved, then 4 slices, stack end-slices 2 high(x3), others 3 high(x4), cut into sticks

  2. 2 ladles oil
  3. 2 tsp black mustard seeds
  4. 2 tsp cumin seeds
  5. 2 onions, chopped
  6. 2 Tbsp Costco garlic, heaped
  7. 1/2 cup loosely packed minced ginger OR 2 Tbsp ginger paste)
  8. 4 jalapenos, chopped
  9. 1 tsp turmeric powder
  10. 1 tsp red chilli powder
  11. 2 tsp cumin powder
  12. 2 tsp amchur powder
  13. 2+1 tsp salt
  14. 4 large Roma tomatoes, diced
  15. Cilantro

Method:

  1. Heat oil and brown the mustard and cumin seeds - HI
  2. Add the garlic, ginger, chillies and onions and brown for 4-5 minutes - MED-HI
  3. Add the turmeric, chilli, cumin, amchur and salt and fry for 2-3 minutes more - MED-HI
  4. Add the chopped baingans and mix thoroughly - MED-HI
  5. Cook covered for 15 minutes on MED,
  6. Add the diced tomatoes and mix well - MED-HI
  7. Cook covered for 15 minutes on MED,
  8. Turn off the heat, add cilantro.
