Geethu's Kitchen - Paru's Baingan Subzi

Ingredients
- 2 large eggplants (or 3 medium ones) - cut stems, halve, then cut into 1 inch pieces
OR18-20 small eggplants: 3 at a time - halved, then 4 slices, stack end-slices 2 high(x3), others 3 high(x4), cut into sticks
- 2 ladles oil
- 2 tsp black mustard seeds
- 2 tsp cumin seeds
- 2 onions, chopped
- 2 Tbsp Costco garlic, heaped
- 1/2 cup loosely packed minced ginger OR 2 Tbsp ginger paste)
- 4 jalapenos, chopped
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp cumin powder
- 2 tsp amchur powder
- 2+1 tsp salt
- 4 large Roma tomatoes, diced
- Cilantro
Method:
- Heat oil and brown the mustard and cumin seeds - HI
- Add the garlic, ginger, chillies and onions and brown for 4-5 minutes - MED-HI
- Add the turmeric, chilli, cumin, amchur and salt and fry for 2-3 minutes more - MED-HI
- Add the chopped baingans and mix thoroughly - MED-HI
- Cook covered for 15 minutes on MED,
- Add the diced tomatoes and mix well - MED-HI
- Cook covered for 15 minutes on MED,
- Turn off the heat, add cilantro.
