Geethu's Kitchen - Mummy's Upma

Ingredients

  1. 2 cups roasted sooji
  2. 2 dried red chillies
  3. 2 long (or 3 short) sprigs curry leaves
  4. 2 tsp black mustard seeds
  5. 2 Tbsp urad dal
  6. 1 medium onion - minced
  7. 6-8 thai chilies - minced
  8. 2 tsp salt
  9. 4 cups boiling water

Method:

  1. Heat up sooji for 2-3 minutes on MED-HI until it feels hot to the touch - keep aside.
  2. Heat oil and fry dried red chillis and mustard seeds - HI
  3. When mustard seeds sputter, add curry leaves and urad dal and fry - MED-HI
  4. When urad dal browns, add onions, green chillies and fry - MED-HI
  5. Add salt amd mix well
  6. Add water and bring to a boil for 1-2 minutes
  7. Slowly stir in sooji in a thin stream, mixing all the time.
  8. Shut off heat and continue to mix until it the mixture is no longer wet.
  9. Spread on a plate for rapid cooling.
