Geethu's Kitchen - Mummy's Upma
Ingredients
- 2 cups roasted sooji
- 2 dried red chillies
- 2 long (or 3 short) sprigs curry leaves
- 2 tsp black mustard seeds
- 2 Tbsp urad dal
- 1 medium onion - minced
- 6-8 thai chilies - minced
- 2 tsp salt
- 4 cups boiling water
Method:
- Heat up sooji for 2-3 minutes on MED-HI until it feels hot to the touch - keep aside.
- Heat oil and fry dried red chillis and mustard seeds - HI
- When mustard seeds sputter, add curry leaves and urad dal and fry - MED-HI
- When urad dal browns, add onions, green chillies and fry - MED-HI
- Add salt amd mix well
- Add water and bring to a boil for 1-2 minutes
- Slowly stir in sooji in a thin stream, mixing all the time.
- Shut off heat and continue to mix until it the mixture is no longer wet.
- Spread on a plate for rapid cooling.
