Geethu's Kitchen - Geethu's Tofu Changezi

Ingredients
- 1.5 packs Tofu, pressed and diced - INGREDIENTS TO MARINATE PANEER
- 1.5 tsp Ginger Garlic Paste
- 1.5 tsp Chaat Masala
- 1/2 tsp Turmeric Powder/Haldi Powder
- 1 Tbsp Oil
- 2 Tbsp Curd
- 3 heaped tsp Besan
- 1 Dried Red Chillies - *INGREDIENTS TO MAKE WHOLE SPICE MIX
- 6 Green Cardamom
- 6 Cloves
- 9 Black PepperCorns
- 1 Black Cardamom or Badi Elachi
- 2 Tej Patta
- 5 tsp Coriander Powder - **INGREDIENTS TO MAKE GROUND SPICE MIX
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Haldi Powder
- 1 tsp Roasted Cumin Powder
- 1 flat tsp Kashmiri Red Chilli Powder
- 1 large red onion, minced - INGREDIENTS TO MAKE GRAVY
- 6 roma tomatoes, grated to remove peel
- 1/2 cup Curd
- *Whole Spice Mix, ** Ground Spice Mix
- 1 Tbsp ginger garlic paste
- 1-1.5 tsp Salt
- 1/2 tsp Garam Masala
- 1 tsp roasted Kasuri Methi
Method:
- Marinate Tofu for 15-30 minutes
- Lightly fry the marinated tofu until it turns golden brown. Keep aside.
- On MED, roast dry masala for a minute or so until it becomes fragrant
- Then add oil (2 Tbsp) and fry onions for a LONG time until caramelized
- Add GG paste and mix well
- Add curd, stirring constantly until absorbed
- Add tomatoes and salt - stir until it becomes like bharta
- Add dry spices and fry 2-3 minutes
- Add upto 1.5 cups water to get correct consistency
- Add the sauteed tofu, mix well and then simmer on LO covered for 5-6 minutes
