Geethu's Kitchen - Geethu's Tofu Changezi

Ingredients

  1. 1.5 packs Tofu, pressed and diced - INGREDIENTS TO MARINATE PANEER
  2. 1.5 tsp Ginger Garlic Paste
  3. 1.5 tsp Chaat Masala
  4. 1/2 tsp Turmeric Powder/Haldi Powder
  5. 1 Tbsp Oil
  6. 2 Tbsp Curd
  7. 3 heaped tsp Besan

  8. 1 Dried Red Chillies - *INGREDIENTS TO MAKE WHOLE SPICE MIX
  9. 6 Green Cardamom
  10. 6 Cloves
  11. 9 Black PepperCorns
  12. 1 Black Cardamom or Badi Elachi
  13. 2 Tej Patta

  14. 5 tsp Coriander Powder - **INGREDIENTS TO MAKE GROUND SPICE MIX
  15. 1/2 tsp Red Chilli Powder
  16. 1/2 tsp Haldi Powder
  17. 1 tsp Roasted Cumin Powder
  18. 1 flat tsp Kashmiri Red Chilli Powder

  19. 1 large red onion, minced - INGREDIENTS TO MAKE GRAVY
  20. 6 roma tomatoes, grated to remove peel
  21. 1/2 cup Curd
  22. *Whole Spice Mix, ** Ground Spice Mix
  23. 1 Tbsp ginger garlic paste
  24. 1-1.5 tsp Salt
  25. 1/2 tsp Garam Masala
  26. 1 tsp roasted Kasuri Methi

Method:

  1. Marinate Tofu for 15-30 minutes
  2. Lightly fry the marinated tofu until it turns golden brown. Keep aside.
  3. On MED, roast dry masala for a minute or so until it becomes fragrant
  4. Then add oil (2 Tbsp) and fry onions for a LONG time until caramelized
  5. Add GG paste and mix well
  6. Add curd, stirring constantly until absorbed
  7. Add tomatoes and salt - stir until it becomes like bharta
  8. Add dry spices and fry 2-3 minutes
  9. Add upto 1.5 cups water to get correct consistency
  10. Add the sauteed tofu, mix well and then simmer on LO covered for 5-6 minutes
