Geethu's Kitchen - Geethu's Raw Mango Rice
Ingredients
- Rice - 1 1/2 Cups
- Raw (hard) Mango - 1 -1.5 (big) - peeled and chopped into pieces (should loosely fill Cuisinart chopper to fill line)
- Thai Chillies - 7
- Ginger - 1 inch
- 1.5 tsp mustard seeds
- 2 red chilies
- 2-3 tsp channa dal
- a pinch of hing
- 2-3 sprigs of curry leaves
- 1.5 salt
- 1/4 tsp haldi
Method:
- Boil Rice.
- Grind b) - d) in Cuisinart chopper
- Heat oil in pan and splutter mustards seeds
- Add red chilies and channa dal
- When channa dal browns, add hing and curry leaves
- After some more browning, add ground paste and fry until oil separates - approx. 10 minutes
- Add salt and haldi
- Switch off and mix in th rice - mix thoroughly.
