Geethu's Kitchen - Geethu's Raw Mango Rice

Ingredients

  1. Rice - 1 1/2 Cups
  2. Raw (hard) Mango - 1 -1.5 (big) - peeled and chopped into pieces (should loosely fill Cuisinart chopper to fill line)
  3. Thai Chillies - 7
  4. Ginger - 1 inch
  5. 1.5 tsp mustard seeds
  6. 2 red chilies
  7. 2-3 tsp channa dal
  8. a pinch of hing
  9. 2-3 sprigs of curry leaves
  10. 1.5 salt
  11. 1/4 tsp haldi



Method:

  1. Boil Rice.
  2. Grind b) - d) in Cuisinart chopper
  3. Heat oil in pan and splutter mustards seeds
  4. Add red chilies and channa dal
  5. When channa dal browns, add hing and curry leaves
  6. After some more browning, add ground paste and fry until oil separates - approx. 10 minutes
  7. Add salt and haldi
  8. Switch off and mix in th rice - mix thoroughly.
