Geethu's Kitchen - Geethu's Palak Paneer

Ingredients

  1. 1 bag Costco Spinach
  2. 1-1.5 tsp salt
  3. 1 pot water ( 2 Costco empty cashew bottles)

  4. 2 packets tofu, pressed to remove water; fry lightly n fake butter

  5. 1 medium red onion, sliced
  6. 1/2 cup raw cashews
  7. 8 Thai green or 3 Serrano chillies
  8. 1 - 1.5 cups water

  9. 4 tbsp chopped ginger
  10. 1tbsp ginger-garlic paste
  11. 1 full tsp chopped garlic
  12. 4 big Roma tomatoes, finely chopped

  13. Pinch of hing
  14. 1/2 tsp haldi
  15. 1.5 tsp jeera
  16. 1 tsp kasuri methi
  17. 1/2 tsp rock salt
  18. 1/2-3/4 tsp garam masala
  19. 1.5 inch butter

  20. Oil for cooking

Method:

  1. Boil pot of water; after it begins to boil, stuff in spinach leaves; boil for 4 minutes, switch off and strain right away. When cool, grind in small chopper to a fine paste
  2. Boil cashews, chopped green chillis, sliced onion for 10-15 minutes or until water dries; when cool, grind in small chopper to a fine paste
  3. In a large nonstick pan, add few tbsp oil, add hing and jeera. Fry for a minute
  4. Add chopped ginger; fry till light brown
  5. Add onion paste and haldi and keep stirring until brown and oil leaves sides. Halfway through frying onion, add ginger-garlic paste and chopped garlic
  6. Add tomatoes and salt; fry till paste thickens
  7. Add ground palak and fry for 10 minutes
  8. Add tofu, kasuri methi, rock salt, garam masala and butter
  9. Stir in, fry for 5-7 minutes (add water for desired consistency). Switch off
