Geethu's Kitchen - Geethu's Paav Bhaji (bharatzkitchen)

Ingredients
- 6 medium to large tomatoes, chopped roughly
- 7 large boiled potatoes, peeled and crumbled roughly
- 3-4 long carrots, chopped roughly
- 1.5 bell pepper, chopped roughly
- 25-30 beans, chopped small
- 1 cup peas
- Dry masalas:
- 2 tsp methi
- 10 cloves
- 2 tsp kasuri methi
- 2 tbsp. MDH or Everest Paav Bhaji Masala
- For tadka:
- 1 large onion, finely chopped
- 1 tbsp. garlic paste
- 1 tbsp. ginger paste
- 2 tsp deggi mirch
- 1 tbsp. MDH or Everest Paav Bhaji Masala
Method:
- Grind methi, cloves, kasuri methi. Place in a bowl and add add paav bhaji masala
- Take a non-stick pan and place on Me flame
- Add a ladle (big spoon) of oil
- Add bell pepper - fry for 3-4 minutes
- Add carrots and beans - fry for 3-4 minutes
- Add peas - fry for 2-3 minutes
- Mash lightly and then add chopped tomatoes, 2 tsp salt and powdered masalas, and 1.25 inch butter
- Mash and mix together to fine paste
- Add potatos and mash together everything until fine paste
- Remove from stove and keep aside
- Tadka:
- In a non-stick pan, add oil and 1 inch butter
- Add chopped onions, ginger and garlic pastes, and masalas (add 3/4 - 1 tsp salt, if desired)
- Stir till onions are well fried.
- Add a little water (1/2 cup) and continue to fry the onions till soft and cooked
- Then add the prepared paav bhaji potato mixture
- Continue to stir in with masher
- Add very little water, if desired, and then cook on Lo with lid for 7 minutes
- Lightly butter paav on tava and serve with paav bhaji
