Geethu's Kitchen - Geethu's Paav Bhaji (bharatzkitchen)

Ingredients

  1. 6 medium to large tomatoes, chopped roughly
  2. 7 large boiled potatoes, peeled and crumbled roughly
  3. 3-4 long carrots, chopped roughly
  4. 1.5 bell pepper, chopped roughly
  5. 25-30 beans, chopped small
  6. 1 cup peas
  7. Dry masalas:
  8. 2 tsp methi
  9. 10 cloves
  10. 2 tsp kasuri methi
  11. 2 tbsp. MDH or Everest Paav Bhaji Masala
  12. For tadka:
  13. 1 large onion, finely chopped
  14. 1 tbsp. garlic paste
  15. 1 tbsp. ginger paste
  16. 2 tsp deggi mirch
  17. 1 tbsp. MDH or Everest Paav Bhaji Masala

Method:

  1. Grind methi, cloves, kasuri methi. Place in a bowl and add add paav bhaji masala
  2. Take a non-stick pan and place on Me flame
  3. Add a ladle (big spoon) of oil
  4. Add bell pepper - fry for 3-4 minutes
  5. Add carrots and beans - fry for 3-4 minutes
  6. Add peas - fry for 2-3 minutes
  7. Mash lightly and then add chopped tomatoes, 2 tsp salt and powdered masalas, and 1.25 inch butter
  8. Mash and mix together to fine paste
  9. Add potatos and mash together everything until fine paste
  10. Remove from stove and keep aside
  11. Tadka:
  12. In a non-stick pan, add oil and 1 inch butter
  13. Add chopped onions, ginger and garlic pastes, and masalas (add 3/4 - 1 tsp salt, if desired)
  14. Stir till onions are well fried.
  15. Add a little water (1/2 cup) and continue to fry the onions till soft and cooked
  16. Then add the prepared paav bhaji potato mixture
  17. Continue to stir in with masher
  18. Add very little water, if desired, and then cook on Lo with lid for 7 minutes
  19. Lightly butter paav on tava and serve with paav bhaji
