Geethu's Kitchen - Geethu's Mango Rice
Ingredients
- 1 large mango, chopped into pieces
- 6 Small to medium Thai chillis
- Few small round red chillis
- 1.5 tsp salt
- I packet Splenda
- 1.5 tsp mustard seeds
- 1.5 tbsp peanuts
- 1 tbsp urad dal
- 1 tbsp channa dal
- 1 tsp jeera
- 3 strands curry leaves
Method:
- Grind together chopped mango, chillis, 1 tsp salt
- To 3 tsp oil, add mustard seeds, after spluttering add jeera, and peanuts, urad dal and channa dal.
- Roast for a while before adding red chillis and curry leaves
- Once dals and peanuts have browned, stir and add mango mixture.
- Cook for 15 minutes on Low. Before switching off, add 1/2 tsp salt and Splenda
- Mix with desired amount of rice
