Geethu's Kitchen - Geethu's Mango Rice

Ingredients

  1. 1 large mango, chopped into pieces
  2. 6 Small to medium Thai chillis
  3. Few small round red chillis
  4. 1.5 tsp salt
  5. I packet Splenda
  6. 1.5 tsp mustard seeds
  7. 1.5 tbsp peanuts
  8. 1 tbsp urad dal
  9. 1 tbsp channa dal
  10. 1 tsp jeera
  11. 3 strands curry leaves

Method:

  1. Grind together chopped mango, chillis, 1 tsp salt
  2. To 3 tsp oil, add mustard seeds, after spluttering add jeera, and peanuts, urad dal and channa dal.
  3. Roast for a while before adding red chillis and curry leaves
  4. Once dals and peanuts have browned, stir and add mango mixture.
  5. Cook for 15 minutes on Low. Before switching off, add 1/2 tsp salt and Splenda
  6. Mix with desired amount of rice
