Geethu's Kitchen - Geethu's Dum Aloo - bharatzkitchen
Ingredients
- 1/2 bag Costco creamer potatoes or 1 bag Spouts potatoes
- 2 tsp deggi mirch powder
- Lightly roast and grind together:
- 15 peppercorns
- 11 cloves
- I long stick dal chini
- 2 tsp coriander
- 2 tsp jeera
- 3 tsp saunf
- 7 green elaichi
- Other ingredients:
- 2.5 cups regular curd (or 1 full carton of regular plain yogurt - for Sprouts)
- 1 cup buttermilk
- 1.5 cups water (or as required for desired consistency)
- 1.5 tsp sonth (ginger powder)
- 1/4 - 1/2 tsp haldi powder
- lots of hing (1 tsp)
Method:
- Boil small potatos; poke holes with fork, if from Costco
- Mix in bowl: curd, buttermilk, dry ground spices, deggi mirch
- Heat oil on Medium flame
- Add lot of hing and sonth powder
- Fry on low for 1 minute
- On Low, add yogurt and mix
- Add salt and water for desired consistency
- When the mixture starts to boil, add potatoes
- Close with lid and let simmer for 10 minutes
- Switch off
