Geethu's Kitchen - Geethu's Creamer Potato Subji
Ingredients
- 1/2 bag Costco creamer baby potatoes, cut into 2 or 4 pieces each, depending on size
- 3/4 packet peas
- 4 roma tomatos
- 1 large onion
- 2 tsp ginger paste
- 1 tsp garlic paste
- 2 Serrano or jalapeno pepper, slit lengthwise and small
- 1.5 tsp mustard seeds
- 1.5 tsp jeera
- Pinch of hing
- 2-3 dry red chilli
- 2 tsp salt; 1tsp rock salt
- 1/2- 3/4 tsp haldi powder
- 1.25 red chilli powder
- 1 tsp curry powder
- 1 tsp pav bhaji masala
- 1 tsp jeera powder
- 1 tsp roasted dhania powder
- 1 tsp aamchur
- 3/4 tsp garam masala
Method:
- Boil potatos - after 2 whistles on Hi, keep 1.5 minutes on Lo (or, 2 minutes on Lo after 1 whistle on Hi). Switch off, keep on same stove for 10 minutes and then remove to cold stove. Peel and cut in half.
- Chop onions.
- Take 4-5 tbps oil in a big pan; add mustard seeds. Turn to low heat when mustard starts spluttering. Turn back to medium heat after spluttering stops and add jeera.
- Add hing
- Add red chilli.and sliced green chilli
- Then add chopped onion; fry for a couple of minutes until translucent
- Add ginger garlic pastes, haldi and chilli powders
- Fry until onions are brown
- Add peas and stir for 5 minutes
- Add chopped tomatoes
- Add salt, jeera, curry , dhania, pav bhaji, rock salt and aamchur powders. Fry for at least 10 minutes untill tomatoes are mixed in and form a paste, with oil leaving the sides.
- Now add chopped potatoes. Stir until potatoes are well coated with masala paste(approx 10-15 minutes)
- Add 1 cup water; simmer for right consistency
- Sprinkle with garam masala and cilantro
