Geethu's Kitchen - Geethu's Creamer Potato Subji

Ingredients

  1. 1/2 bag Costco creamer baby potatoes, cut into 2 or 4 pieces each, depending on size
  2. 3/4 packet peas
  3. 4 roma tomatos
  4. 1 large onion
  5. 2 tsp ginger paste
  6. 1 tsp garlic paste
  7. 2 Serrano or jalapeno pepper, slit lengthwise and small
  8. 1.5 tsp mustard seeds
  9. 1.5 tsp jeera
  10. Pinch of hing
  11. 2-3 dry red chilli
  12. 2 tsp salt; 1tsp rock salt
  13. 1/2- 3/4 tsp haldi powder
  14. 1.25 red chilli powder
  15. 1 tsp curry powder
  16. 1 tsp pav bhaji masala
  17. 1 tsp jeera powder
  18. 1 tsp roasted dhania powder
  19. 1 tsp aamchur
  20. 3/4 tsp garam masala

Method:

  1. Boil potatos - after 2 whistles on Hi, keep 1.5 minutes on Lo (or, 2 minutes on Lo after 1 whistle on Hi). Switch off, keep on same stove for 10 minutes and then remove to cold stove. Peel and cut in half.
  2. Chop onions.
  3. Take 4-5 tbps oil in a big pan; add mustard seeds. Turn to low heat when mustard starts spluttering. Turn back to medium heat after spluttering stops and add jeera.
  4. Add hing
  5. Add red chilli.and sliced green chilli
  6. Then add chopped onion; fry for a couple of minutes until translucent
  7. Add ginger garlic pastes, haldi and chilli powders
  8. Fry until onions are brown
  9. Add peas and stir for 5 minutes
  10. Add chopped tomatoes
  11. Add salt, jeera, curry , dhania, pav bhaji, rock salt and aamchur powders. Fry for at least 10 minutes untill tomatoes are mixed in and form a paste, with oil leaving the sides.
  12. Now add chopped potatoes. Stir until potatoes are well coated with masala paste(approx 10-15 minutes)
  13. Add 1 cup water; simmer for right consistency
  14. Sprinkle with garam masala and cilantro
