Geethu's Kitchen - Geethu's Capsicum Onion Curry with Mint

Ingredients

  1. 1/2 large onion, chopped fine
  2. 4 Roma tomatoes, chopped fine.
  3. 4 large green bell pepper; sliced lengthwise and in triangles
  4. 3/4 large onion, cut in bulbs

  5. 1 tsp jeera
  6. 1/2 tsp saunf
  7. 1 tsp mustard seeds
  8. 1/4 tsp methi seeds

  9. 2 cups curd beaten with 1 tbsp dhania powder
  10. 3 full tbsp. besan
  11. 1/2- 3/4 tsp haldi powder
  12. 1 tbsp ginger-garlic paste
  13. 1 tsp kashniri mirch powder
  14. 3/4 tsp. garam masala
  15. 1 packet splenda
  16. 2 tsp salt
  17. 1 tsp dry mint leaves



Method:

  1. Lightly blanch and fry onion bulbs and bell pepper until partially cooked. Keep aside.
  2. Take a pan. Add oil
  3. Add jeera, saunf, mustard., methi - fry for 1/2 minute
  4. Then add chopped onion
  5. When onions are lightly fried, add haldi, mirchi powder and ginger-garlic paste
  6. When onions are well fried, add chopped tomato and salt
  7. Fry well until oil leaves the sides
  8. Then add besan, blend it in and fry for 3-4 minutes
  9. Then add beaten dhania powder curd, and fry continuously for 5 minutes
  10. Add splenda,, cover and cook for 1 minute
  11. Blend in blanched bell-pepper-onion and fry for 5 minutes to mix in the masalas
  12. Finally add mint and garam masala, little water for desired consistency
  13. Place lid and fry for 5 - 7 minutes on low flame
