Geethu's Kitchen - Geethu's Bhindi Masala (bhrtz)

Ingredients

  1. 3 lbs Bhindi cut in 1" pieces
  2. 1 large onion, roughly chopped

  3. Puree:
  4. 2 Roma tomatoes + one can diced tomatoes
  5. 6 garlic cloves
  6. 1 big 2" piece ginger
  7. 5-6 small Thai chilies

  8. Dry Masala:
  9. 1 tsp amchur
  10. 1/2 tsp anardana
  11. 4.5 tsp dhania powder
  12. 1 tsp kashmiri chili powder

  13. 15 Tbsp beaten dahi

Method:

  1. Heat oil and fry onions until pale pink - MED
  2. Add Bhindi + 1 tsp salt + 1 tsp haldi
  3. Fry for 15 minutes until soft - set aside

  4. Add oil and fry 1.5 tsp jeera + 1 tsp ajwain + 1/4-1/2 tsp hing - MED
  5. Add tomato puree + 1 tsp salt
  6. Stir until oil separates - but before Bharta consistency
  7. Add dry masala and stir
  8. Add dahi and stir
  9. Add 3/4 tsp garam masala + 1 full tsp kasuri methi
  10. Fry everything for 5 minutes

  11. Add the cooked Bhindi and mix well for 10 minutes
  12. Add water (2 cups) to desired consistency, cover and simmer on LO for 7 minutes
