Geethu's Kitchen - Geethu's Bhindi Masala (bhrtz)

Ingredients
- 3 lbs Bhindi cut in 1" pieces
- 1 large onion, roughly chopped
- Puree:
- 2 Roma tomatoes + one can diced tomatoes
- 6 garlic cloves
- 1 big 2" piece ginger
- 5-6 small Thai chilies
- Dry Masala:
- 1 tsp amchur
- 1/2 tsp anardana
- 4.5 tsp dhania powder
- 1 tsp kashmiri chili powder
- 15 Tbsp beaten dahi
Method:
- Heat oil and fry onions until pale pink - MED
- Add Bhindi + 1 tsp salt + 1 tsp haldi
- Fry for 15 minutes until soft - set aside
- Add oil and fry 1.5 tsp jeera + 1 tsp ajwain + 1/4-1/2 tsp hing - MED
- Add tomato puree + 1 tsp salt
- Stir until oil separates - but before Bharta consistency
- Add dry masala and stir
- Add dahi and stir
- Add 3/4 tsp garam masala + 1 full tsp kasuri methi
- Fry everything for 5 minutes
- Add the cooked Bhindi and mix well for 10 minutes
- Add water (2 cups) to desired consistency, cover and simmer on LO for 7 minutes
