Geethu's Kitchen - Geethu's Baked Moong Dal Muffins
Ingredients
- 4 cup moong dal soaked for 8 hours
- 3.5 tsp salt
- 3.5 tsp Chunky chaat masala
- 3.5 tsp salt
- 3 tsp jeera powder
- 30 Thai chillis, chopped
- Lots of ginger, chopped fine
- 12 sprigs curry leaves, chopped
- 1/4-1/2 bunch cilantro chopped
- 4 large potatoes, boiled and mashed
- 1 large zucchini, grated
- 375 degrees, first side, add a drop of oil in each muffin hole, after wiping all holes with oil the first use. Each side 20 minutes
- Alternate method : 3 large potatos + 2 zucchini
- Add 1 tsp baking soda, five minutes before start
- 375-400 degrees each side; 20 minutes each side
