Geethu's Kitchen - Geethu's Baked Moong Dal Muffins

Ingredients

  1. 4 cup moong dal soaked for 8 hours
  2. 3.5 tsp salt
  3. 3.5 tsp Chunky chaat masala
  4. 3.5 tsp salt
  5. 3 tsp jeera powder
  6. 30 Thai chillis, chopped
  7. Lots of ginger, chopped fine
  8. 12 sprigs curry leaves, chopped
  9. 1/4-1/2 bunch cilantro chopped
  10. 4 large potatoes, boiled and mashed
  11. 1 large zucchini, grated

  12. 375 degrees, first side, add a drop of oil in each muffin hole, after wiping all holes with oil the first use. Each side 20 minutes

  13. Alternate method : 3 large potatos + 2 zucchini
  14. Add 1 tsp baking soda, five minutes before start
  15. 375-400 degrees each side; 20 minutes each side
