Geethu's Kitchen - Geethu's Baingan (small) subji

Ingredients

  1. 25 small baingan
  2. 1 large onion, chopped
  3. I jalapeño, chopped fine
  4. 1 tsp garlic paste
  5. 1.5-2 tsp ginger paste
  6. 2 Roma tomatoes, chopped
  7. 1.5 tsp jeera
  8. 1.5-2 tsp salt
  9. Pinch hing
  10. 2 tsp dhania powder
  11. 1 tsp curry powder
  12. 3/4 tsp jeera powder
  13. 1 tsp red chilli powder
  14. 1/2 tsp haldi powder
  15. 3/4 tsp aamchur
  16. 3/4 tsp garam masala

Method:

  1. Oil + jeera + onion + ginger-garlic paste + baingan
  2. Oil+ jeera + hing + chopped ginger + chopped jalapeño + onion +chopped garlic + baigan
  3. Add spices + salt. Cook until partial soft. Add chopped tomatoes
  4. Add garam masala
