Geethu's Kitchen - Geethu's Baingan (small) subji
Ingredients
- 25 small baingan
- 1 large onion, chopped
- I jalapeño, chopped fine
- 1 tsp garlic paste
- 1.5-2 tsp ginger paste
- 2 Roma tomatoes, chopped
- 1.5 tsp jeera
- 1.5-2 tsp salt
- Pinch hing
- 2 tsp dhania powder
- 1 tsp curry powder
- 3/4 tsp jeera powder
- 1 tsp red chilli powder
- 1/2 tsp haldi powder
- 3/4 tsp aamchur
- 3/4 tsp garam masala
Method:
- Oil + jeera + onion + ginger-garlic paste + baingan
- Oil+ jeera + hing + chopped ginger + chopped jalapeño + onion +chopped garlic + baigan
- Add spices + salt. Cook until partial soft. Add chopped tomatoes
- Add garam masala
