Geethu's Kitchen - Geethu's Aloo Tikki
Ingredients
- 5 lb Fry's Yukon Gold or Gold Idaho potatoes + 5 large russet potatoes
- Boil in pressure cooker in two batches: push weight down once after steam comes; on Low for 1- 1.15 minutes. Leave on same stove until fully depressurized
- 3 tsp salt
- 3 tsp Chunky chaat masala
- 3 tsp roasted jeera powder
- 25 Thai chiilis
- 3-4 tbsp chopped ginger
- 15 long strands curry leaves
- Chopped cilantro
Method:
- Griddle - initially heat to 300 degrees, then increase to 350 degrees
- 15 tikkis at a time
