Geethu's Kitchen - Geethu's Aloo Tikki

Ingredients

  1. 5 lb Fry's Yukon Gold or Gold Idaho potatoes + 5 large russet potatoes
  2. Boil in pressure cooker in two batches: push weight down once after steam comes; on Low for 1- 1.15 minutes. Leave on same stove until fully depressurized
  3. 3 tsp salt
  4. 3 tsp Chunky chaat masala
  5. 3 tsp roasted jeera powder
  6. 25 Thai chiilis
  7. 3-4 tbsp chopped ginger
  8. 15 long strands curry leaves
  9. Chopped cilantro

Method:

  1. Griddle - initially heat to 300 degrees, then increase to 350 degrees
  2. 15 tikkis at a time
