Geethu's Kitchen - Geethu's Aloo Masala Curry

Ingredients

  1. 6 large potatoes; peeled, cut into cubes, soaked in water
  2. I large onion, chopped
  3. 1 tin diced tomatoes, pureed (not fine)
  4. 2 cups frozen peas
  5. 2 tsp jeera
  6. I.5 heaped tbsp ginger-garlic paste
  7. 2 tsp salt
  8. 1 tsp red chili powder
  9. 1/2 tsp haldi powder
  10. 1/2 - 3/4 tsp aamchur
  11. 3 tsp dhania powder
  12. 4 whole green chilis
  13. 1/4 tsp hung
  14. 1 tsp kasuri methi
  15. 3/4 tsp garam masala
  16. Cilantro, chopped

Method:

  1. Heat 4 tbsp oil
  2. Add jeera
  3. Add chopped onions and fry till pale pink
  4. Add chopped potatoes; fry well until potatoes develop brown crust
  5. Halfway, add ginger-garlic paste and haldi powder and continue frying onions and potatoes
  6. When onions and potatoes are light brown, add tomato puree and salt
  7. Cover and cook until puree partially thickens,, add dhania, mirchi, aamchur powders
  8. Add whole green chilis and hing
  9. Mix well and cover and cook for 5 minutes
  10. Add peas and water (1 cup) and cover and cook for 10 minutes on Lo-Me
  11. Add kasuri methi, garam masala and chopped cilantro, water (to desired consistency)
  12. Close lid and cook for another 10 minutes on Lo-Me, and switch off
