Creamy Tomato (based on this): Heat 2 Tbsp oil, 1/2 onion, 2 cloves garlic, then 1/4 14 oz pkt silken tofu (firm makes it grainy), add 1 14-oz can diced tomatoes, 1.5 packets Splenda, 1/2 tsp salt,1/2 cup water to wash out can, 1/2 tsp Italian seasoning
Spinach Salad
1 cup walnuts, broken into small pieces
1/2 cup craisins OR 1 cup grapes, halved
2 small apples OR 1 large pear, cored and diced
2 Tbsp olive oil
15-20 turns of fresh ground black (or white schechuan) pepper
1/2 tsp salt
1/2 tsp Chunky Chaat Masala
optional:
1 Splenda packet
1/2 cucumber, diced
1/2 red bell pepper, diced
2 Roma tomatoes, diced
1/2 can of Costco olives, quartered
3 large fistfuls of Costco spinach, coarsely chopped
1/2 cup shredded cheese (optional)
In a large bowl, combine walnuts and first set of items and toss well.
Add optional items and toss well
Just before serving, add in the spinach and toss well - use the Tbsp and tsp used for oil/spices.
Add cheese and mix thoroughly
Padma Boondi Raita
2.5 cup Boondi (soaked for 1-2 min in glass bowl with hot water, drained gently into small colander)
Add 4 cups yoghurt to glass bowl (plus 1 cup water to rinse out meas. cup and yogurt container) and beat well
Add 1 tsp salt, 20 turns pepper, 2-3 thai chilli (finely minced) and mix well
Add soaked boondi and mix gently
Sprinkle crushed red pepper (~ 1Tbsp) on top in sparse layer
