10 large basil leaves, minced OR 2 heaped Tbsp Costco pesto
5 large basil leaves for garnish
4 Tbsp grated Parmesan cheese
Heat oil and fry red pepper flakes
Add garlic and fry some more
Add italian seasoning and mix
Add dice tomatoes and cook for 5 minutes, adding the minced basil after tomatoes start cooking
Add cooked pasta, pasta water (as needed) and cook for 10 minutes on LO
Garnish with basil and Parmesan and mix well
Paru - Baa Arrabbiata
1/2 Packet of 16 oz Great Value Garden Rotini - cooked + 1 cup pasta water
2 heaped Tbsp Costco pesto + 1 can Costco tomato paste/sauce - mixed in large steel katori with little pasta water
2 level tsp crushed red pepper (2 dried red chili peppers, ground)
2 heaped tsp Costco minced garlic
1 medium red onion chopped (2 cups)
1/2 tsp Italian seasoning
1 level tsp salt
Grated parmesan cheese - 2 heaped Tbsp
Heat oil and fry garlic + crushed red pepper, then add onions and fry well ~ 5 min
Add ground paste + Italian seasoning + salt and fry some more
Add cooked pasta and mix well, adding pasta water as needed (4 Tbsp at a time) ~1 cup
Shut off heat and add the grated Parmesan
Paru - Thai Chinese Noodles
1 lb packet angel hair (capellini) pasta
4 Tbsp creamy peanut butter (warmed in microwave on HI for 30 seconds)
6 Tbsp soy sauce
4 Tbsp chilli sauce
3 Tbsp rice wine vinegar
4 cloves of garlic, finely chopped OR 2 Tbsp minced garlic
1 Tbsp ginger, paste
2 Tbsp chilli sesame oil
1/2 Spenda
2 spring onions, green section sliced on a bias and white section roughly chopped
Prepare sauce in a large bowl with all ingredients except pasta. (Rinse out cup used to warm peanut butter with some hot water and add to sauce.)
Cook pasta according to instructions. Bring a large pot of water to boil (pasta should float well in water when cooking), add pasta and cook for 6-8 minutes - HI. (Boil for 2-4 minutes more than recommendations for al dente.)
Drain pasta into colander.
Add drained pasta to sauce and toss with fork and table spoon until everything mixed (5-8 minutes).
Paru - Indo Chinese Noodles (based on this and this)
1 lb packet angel hair (capellini) pasta
1/2 small cabbage, shredded (OR 1 packet of angel hair slaw), ~5 cups
3 carrots (4 if thin), slivered (OR 1/2 packet shredded carrots), ~ 2 cups (cook with 4 Tbsp of water in microwave for 4 min to soften)
2 cups frozen beans (French sliced) - 1/2 16 oz packet OR 1 14-15 oz can beans
1 large red bell pepper, slivered, ~ 2 cups
1 packet Walmart green onions, white chopped, greens kept aside (chopped thin so they are cooked in final heat)
12-25 Thai chilies (2 heaped Tbsp) OR 2-3 Serrano chilies (.5 cup) OR 3 large jalapenos (.75 cup) - finely minced
Boil pasta in salted(2 tsp salt) water for 4 min, shut off heat and drain after 2 minutes - rinse with cold water and mix in 1 Tbsp oil
Heat oil and fry garlic, whites of green onions, thai chilies 2 min - HI
Add beans and ginger paste and fry 2 min - HI
Add cabbage, carrots, bell pepper and fry for 2-3 min - HI
Add salt, soy sauce, vinegar mix well - MED
Add noodles a bunch at a time (untangled) and fry well - MED
Shut off heat and mix in green parts of green onions
NOTE: To make chilli soy sauce (see more for ingredients): ½ cup minced jalapeno(~2) + ½ cup soy sauce + ¼ cup vinegar + 2 Tbsp Balsamic vinegar + 1/4 cup water + 1 tsp salt + 2 tsp Splenda: mash chilies into soy sauce in grey soup bowl, then add and mix in rest of ingredients.
Paru - Lemon-pepper Pasta (based on this and this and this)
Gen - Cooking Soba Noddles (based on this and this)
Use 1/2 packet Nanka Seimen noodles.
As it begins to boil over, add one cup of cold water and stir. Bring back to boil - reduce heat to LO and cook partially covered (should be boiling well) for 8 minutes.
Then turn off the flame, cover the pot and let noodles sit for 5 minutes.
Drain and rinse in cold water - scrub gently with hands to remove starch and prevent gummy mess.
Cook pasta, save 1 large glass pasta water (~4-5 ladles), then drain, run cold water, mix in 2 tsp EVOO (10+2) min for regular pasta, (8 6+2) min for Zucchini/Chickpea penne
Heat oil, fry the crushed red pepper, thai chilies and garlic.
Then add the Italian seasoning, mix well and then add the drained pasta and fry well for a couple of minutes, adding a little of the pasta water at a time.
Then add the pesto (and sun-dried tomatoes, if using) and mix well
Then add spinach by a handful at a time and mix well.
